Ingredients:
- 2 tbsp freshly squeezed orange juice
- 1 tsp orange zest
- 2 tbsp freshly squeezed lemon juice
- 1 tsp lemon zest
- 2 tsp honey
- 2 tsp whole grain mustard
- Pinch of salt and pepper
- 1/3 cup olive oil
- 4-6 cups arugula
- Shaved parmesan
- Chopped macadamia nuts

Directions:
1. In a small bowl, whisk together the orange juice, orange zest, lemon juice, lemon zest, honey, mustard, a pinch of salt and pepper, and the olive oil until combined. Taste and add more salt if needed.
2. To serve, spread the arugula out onto a serving platter and top with the shaved parmesan and nuts. Drizzle desired amount of dressing over the top and garnish with freshly cracked black pepper.

- 2 large russet potatoes, scrubbed clean
- 2 tbsp avocado oil
- Salt and pepper
Directions
1. Preheat the oven to 400 degrees Fahrenheit.
2. Cut the potatoes into ¼-½" thick uniform fries.
3. Place the cut potatoes onto a large baking sheet and pat dry with a paper towel.
4. Toss with the avocado oil until all of the potatoes are completely coated, then spread evenly over the pan.
5. Bake for 20 minutes, then increase the oven temperature to broil. Broil for 3-6 minutes, checking every 1-2 minutes and flipping until the fries are golden brown and crisp.
6. Remove from the oven and immediately season with a pinch of salt and pepper.
